Rancho Bakery reopens, but Andronico’s not involved

The recently closed bakery in Rancho Shopping Center reopened last Friday, but not under Andronico’s Market as anticipated. 

Instead, the former Rancho Swiss Bakery, is being operated independently, headed by pastry chef Brian Bacher.  Rancho Swiss Bakery, reopening in time for holidays, will continue the traditions of its predecessor -- with a French-Italian twist. 

Andronico’s officials had planned to take over the neighboring bakery, effective October 1, and incorporate it into the existing market.  However, those plans have apparently fallen through.  A spokeswoman at owner Bill Andronico’s office confirmed Andronico’s was no longer involved in the bakery, but did not elaborate.  One unidentified Andronico’s employee said the market pulled out after the city required a sound wall when officials wanted to put in an entrance between the market and the bakery.   
  
Bacher, a 1989 graduate of the California Culinary Academy in San Francisco, is a third generation pastry chef whose father and grandfather worked in the East Bay, Oakland and Berkeley.   
  
“It’s been a family tradition to run a bakery.  It started with my great-grandfather and continued down through the years.”  Bacher said.  “All I’ve ever done is scratch baking, and you can’t start a baking business in a few days so the menu will be limited to a holiday menu to start with.  Chris Younger is my baking specialist and will start with seasonal pies, dinner rolls, croissants, Danish and brioche.”   

Bacher, who lives in Sunnyvale, said he has been looking more than a year for a bakery and found the Rancho Swiss Bakery through a food distributor. 
  
“Even though this is a turnkey operation, it has been closed for a month and a half, and it has to be built up with supplies and baking items,” Bacher said. 

“In the long term, we will bring in a hearth and make breads once the ovens are changes.” 

Since the 1950’s, there has been a bakery in the Rancho Shopping Center.  The previous owners of Rancho Swiss Bakery, Paul and Elsbeth Johannes, recently retired after 12 years in the business.   
  
The Rancho Swiss Bakery is open 6 a.m. to 6 p.m. Monday through Friday and 7 a.m. to 5 p.m. Sundays.
